Rhum Brown Sugar-Grilled Pineapple

Did you know? Pineapples can be consumed fresh, cooked, juiced, and preserved, and are found in a wide array of cuisines. In addition to consumption, the pineapple leaves are used to produce the textile fiber piña in the Philippines, commonly used as the material for the men’s Barong Tagalog and women’s Baro’t saya formal wear in the country. The fiber is also used as a component for wallpaper and other furnishings.
Rhum Brown Sugar-Grilled Pineapple
Serves 4
You Will Need
1 cup lemon juice
3/4 cup maple syrup
Handful of fresh mint
1/2 Cup Dark Rhum
1/4 cup firmly packed light brown sugar
1 fresh pineapple, peeled, cored and cut into thick slices
To Garnish
4 cups vanilla ice cream
Seasonal fruit to garnish
Preparation
Mix all ingredients in a container, let stand 10 minutes.
Cut each pineapple into 8 thick slices then add to marinade, let stand for 1 hour
Place pineapple slices on a hot grill for about 2-3 minutes each side (or until golden)
Just before serving heat up your marinade and pour over top of your grilled pineapple.
Serve with ice cream and seasonal fruit. Voila!
