Green Papaya Salad
Green Papaya crunches like carrot, but tastes mild like a cucumber. This papaya (or pawpaw) salad is a light and refreshing salad using easy to find local produce of Vanuatu such as the green papaya, local raw peanuts, birds eye chili, lime juice and fresh mint that gives this salad a nice balance of flavor.
Green Papaya Salad
Serves 6
Ingredients
- 1 Green papaya
- ½ Cup of raw chopped peanuts
- Handful of mint leaves
- 4 Tablespoon of lemon or lime juice
- ½ Onion, thinly sliced
- Olive oil
- Sweet chilli sauce
- Salt & pepper to taste
Grate your papaya (this can be done in advance and kept in a cool place until ready to serve). To serve toss all the ingredients together in a large bowl, stir gently, chill for five minutes and serve with fish, chicken or just on it’s own with some crusty bread.
